Chocolate slice with poached mandarins and chocolate sauce

Ingredients

  • 180g butter, chopped
  • 330g dark chocolate, chopped
  • 3 eggs
  • 270g caster sugar
  • 120g plain flour
  • 150g caster sugar
  • 150ml water
  • 50ml orange juice
  • 2 mandarins
  • 100ml cream
  • 100g dark chocolate

Method

  1. Preheat oven to 160° C
  2. Grease an 18cm square cake tin and line with baking paper
  3. Melt the butter and chocolate together in a large bowl over just simmering water and stir to combine
  4. In another large bowl whisk the eggs and sugar until thick and light in colour
  5. Add the melted chocolate butter mix then fold in the flour
  6. Pour into the prepared tin and bake for 30-35 minutes until set
  7. Allow to cool in the tin, remove and cut into portions
  8. Place the sugar, water and juice into a small saucepan over a low heat, stir to dissolve the sugar and simmer for 5 minutes
  9. Peel and segment the mandarins and add to the syrup
  10. Simmer for 5 minutes, remove from the heat and allow to cool
  11. Place the cream into a small saucepan and bring to the boil
  12. Add the chopped chocolate and stir to melt the chocolate in the hot cream
  13. To serve, place a piece of the chocolate slice onto a plate
  14. Pile the poached mandarins next to the slice

Notes

The kids can definitely help with this one, from mixing the slice to peeling and poaching the mandarins.
