Watermelon crush

½ cup castor sugar
300mL water
750g watermelon flesh, seeds removed
2 tablespoons lemon juice


  1. Put sugar and water in a saucepan and bring to the boil for 5 minutes then cool
  2. Puree watermelon flesh in a blender
  3. Add sugar syrup and lemon juice and mix well
  4. Put into a tray and place in freezer
  5. When the mixture starts to set, remove from freezer and blend well or mix it with a fork, then place it back in the freezer
  6. Remove from freezer 15 minutes prior to serving
  7. Spoon into serving glasses
